A hint of heat from red chilli marry tastily with the sweetness of ripe and juicy tomatos and apple. What could be nicer in a crusty baguette or with a nice ham doorstop sandwich.... Saturday afternoon food at it's finest!

 

Ingredients:

Tomato (36%), Apple, Onion, Vinegar, Sugar, Pectin Extract, Chilli.

Allergen information: Dairy and wheat free.

Tingly Tomato Lamb:
1 Glass of red wine (nothing you'd not be prepared to drink!)
1 Jar of Tingly tomato
1 Lamb Shoulder
1 Sprig of Rosemary (optional!)

For the sauce
Flour
A bit more wine
A stock cube (lamb if you have it but anything will do!)
A sprinkle of brown sugar

Marinade the lamb in 1 glass of red wine mixed with a jar of tingly tomato and stick the rosemary in gor good measure.
Leave it for 24 hours or so.
Remove the lamb and cook it on a rack in the oven. (don't thrown the juice away!)
Whilst the lamb rests
Push juices through a sieve (getting all the good flavours into the sauce) into the pan and deglaxe the pan before adding a table spoon of flour and stiring it all the time. Make sure it's bubbling hot.
Add the stock cube, a bit of water and another glug of wine (until it's as thick as you like it and about a teaspoon of brown sugar and cook thourghly until it tastes good!

I served it with fresh veg from the allotment: new potato's, cougettes, french beans, red and green pepper and cherry tomato all tossed in balsamic vinegar and olive oil, seasoned with sea salt and then roasted in the oven!

Very surprised! I bought this as a part of a birthday pack for my boyfriend and was very surprised at how much I enjoyed it. Just the right amount of
heat for me, just a warm feeling at the back of my throat but I was surprised by how sweet it is; I think the apples really work with the tomatoes to
provide something very sweet and - the jar doesn't lie! - tingly. I cooked it with turkey breast wrapped in Sillfield Farm streaky bacon and lots of
roast vegetables and it was absolutely gorgeous - two very happy campers!
