A rillette is a pâté which has a slightly stringy appearance. It’s made of duck meat, cooked for a long time, crushed and seasoned with herbs and spices.Practical and easy to spread on bread, rillette is often eaten in a sandwich or on toast. They are also served with small gherkins as an accompaniment to a drink before dinner. They are sold in vacuum- packed ceramic dish.
